Asparagus used to be a a veggie I wouldn’t touch with a Ten foot pole. After some experiments in culinary school, I learned to love it! This tangerine glazed asparagus is sweet and delicious. Try this at the dinner table, I promise you won’t regret it.
Ingredients:
- 10-12 Spears Fresh Asparagus -Trimmed
- 2 tbsp Unsalted Butter
- 2 tbsp Fresh Garlic-minced
- Kosher Salt
- Black Pepper
Glaze:
- 1 cup Fresh Tangerine Juice(sub Fresh orange juice if tangerines not available)
- 1/2-3/4 cup Granulated Sugar
- 2 tbsp Unsalted Butter
Directions:
- Grab a large pot and boil some water. Place ice in a bowl and Add water to create an ice bath
- Place asparagus in water for 30 seconds to 1 minute or until bright green
- Remove asparagus and place in ice bath until cool
- In a sauce pot, add tangerine juice, sugar and butter. Cool over med heat until thickened
- In a large sauté pan over medium heat, add butter
- Add garlic to the butter and cook for 15 seconds, then add asparagus
- Saute and season with salt and pepper , pour over glaze and cook for 2-3 minute.
- Remove from pan and enjoy!
Tip: Reserve some glaze for the protein or meat substitute you plan on serving to bring the dishes together!
