Tangie Glazed Asparagus

Asparagus used to be a a veggie I wouldn’t touch with a Ten foot pole. After some experiments in culinary school, I learned to love it! This tangerine glazed asparagus is sweet and delicious. Try this at the dinner table, I promise you won’t regret it.

 

Ingredients:

  • 10-12 Spears Fresh Asparagus -Trimmed
  • 2 tbsp Unsalted Butter
  • 2 tbsp Fresh Garlic-minced
  • Kosher Salt
  • Black Pepper

Glaze:

  • 1 cup Fresh Tangerine Juice(sub Fresh orange juice if tangerines not available)
  • 1/2-3/4 cup Granulated Sugar
  • 2 tbsp Unsalted Butter

Directions:

  1. Grab a large pot and boil some water. Place ice in a bowl and Add water to create an ice bath
  2. Place asparagus in water for 30 seconds to 1 minute or until bright green
  3. Remove asparagus and place in ice bath until cool
  4. In a sauce pot, add tangerine juice, sugar and butter. Cool over med heat until thickened
  5. In a large sauté pan over medium heat, add butter
  6. Add garlic to the butter and cook for 15 seconds, then add asparagus
  7. Saute and season with salt and pepper , pour over glaze and cook for 2-3 minute.
  8. Remove from pan and enjoy!

Tip: Reserve some glaze for the protein or meat substitute you plan on serving to bring the dishes together!
