It’s all in the Ribs!

The secret to great ribs made in your oven right here! No need for the grill or the smoker. These sweet chili glazed our slab of ribs covered in the asian-inspired rib rub ribs are sure to be a crowd pleaser or a family favorite!

The key to any great slab of ribs is time and patience. These ribs take about 2-2 1/2 hours to cook but they are worth the wait! I started by drying the ribs and setting oven temp. Always pre-heat your oven and remove any moisture from your meat prior to cooking to achieve a amazing crust. Next, I covered the ribs in a mix of fragrant and smoky spices and allowed the seasoning to sit on the ribs for about 20 minutes before cooking. This allows the seasoning to permeate the meat and better absorb the seasonings. Next came…..the oven sear! This is a simple technique that involves setting the oven to a high heat and cooking the protein for about 20 minutes to achieve a nice crust then lowering the heat to slow cook the protein. Once we achieve that crust and lower the temp, we lightly cover the ribs in foil and cook for 45 minutes to an hour and check our meat. If tender, we leave uncovered and cook for another 20-30 minutes. Lastly, we broil the protein and crisp up the ribs before covering in sauce and broiling for 3 minutes to glaze our ribs! These ribs are deliciously sticky and hit the spot , even for the hardcore bbq fans!

Recipe:

  • 1 slab of ribs
  • Kosher salt (to taste)

Rub:

  • 1/2 cup brown sugar
  • Black pepper (to taste)
  • Ground coriander (to taste)
  • Ground ginger (to taste)
  • 2-3 tbsp Smoked paprika
  • 2 tsp chinese five spice
  • 1 tsp ground mustard
  • 1/2 tsp ground cloves
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp cayenne powder

Glaze:

  • 1 stick butter
  • 1 cup brown sugar
  • 2 tbsp sambal chili paste
  • 1 tbsp sriracha
  • 1 lime (zested and juiced)
  • 1/2-1 cup rice vinegar
  • 1 cup mirin
  • 1 tsp minced garlic
  • 1 tbsp miso paste
  • 1/2 tbsp ginger paste
  • Soy sauce (to taste)
  • 2 tbsp Hoisin sauce

Garnish:

  • sesame seeds(toasted)
  • cilantro (finely cut)
  • Scallions(cut on bias)

Directions:

  1. preheat oven to 400 degrees. Remove ribs from packaging and dry throughly
  2. combine seasonings and taste. Adjust as needed
  3. cover both sides of ribs throughly, rubbing into the slab and crevices
  4. once oven is ready, place ribs on rack with sheet pan underneath and roast uncover for 20 minutes or until crust forms.
  5. lower oven to 300 degrees and cook covered in foil for 1 hour
  6. check ribs and continue to cook until tender
  7. combine all glaze ingredients in pot and bring to simmer, adjust seasonings and cook until thickened.
  8. once ribs are tender, uncover and broil for 3-5 minutes until crisp
  9. remove and glaze skin side, place in oven and broil till caramelized, repeat on reverse side
  10. repeat until desired coating is achieved
  11. let rest 7-10 minutes
  12. finish with fresh cut scallion, cilantro and toasted sesame seeds!
