Easy Queso




  • 2-3 cups Half & Half
  • ½ tbsp Corn Starch
  • 8 oz of Monterey Jack or Pepper Jack
  • 1 Small can Diced Chilis
  • Chili Powder- To Taste
  • Onion Powder- To Taste
  • Garlic Powder- To Taste
  • Kosher Salt- To Taste
  • Black Pepper- To Taste
  • ¼ cup Diced Onion & Cilantro – optional



  1. Add the cold half and half to a medium sauce pan. Whisk in the corn starch until its fully dissolved.
  2. Place over medium heat and whisk until the mixture has begun to thicken. Slowly begin to whisk in the cheese. add in 1/4ths until all of the cheese has been added and melted.
  3. Add the chilis, onion, and cilantro if desired.
  4. Add the seasonings and mix thoroughly.
  5. Dip and enjoy!
