This simple avocado toast will guarantee a great start to any morning or a great addition to any brunch!
Ready in 10 minutes
- 1 medium/large avocado
- 1 tbsp Olive oil or Grapeseed oil + 2 tsp for garnish
- 1 Small Lemon
- Fresh Cracked Black Pepper
- Kosher salt
- 2 slices Whole Grain Bread
- Micro-kale or Micro-cilantro- for garnish
- Poached egg (optional)
- 2 slices Crispy Pancetta (optional)
- Scoop out both halves of avocado into a bowl
- Add olive oil and salt and mash together until creamy
- Toast whole grain bread
- Spread avocado mix on toast evenly
- Drizzle oil on top
- Garnish with micro greens and lemon
- Crack black pepper over toast
Note: if adding poached egg and pancetta, layer it on top of avocado egg first then pancetta and finally micro greens, pepper and lemon.
You can also blend together the avocado, lemon and oil to have a fluffy avocado toast!
