Citrus Rosemary Turkey

Being in the holiday season and thanksgiving just past, most people wonder how they can make their turkey moist and full of flavor. This recipe will ensure your bird comes out moist and full of flavor. This is the perfect recipe for the holidays and can be used on chickens as well, just cut the quantity of ingredients in half and dress your chicken. Even though we have passed Thanksgiving, Christmas is right around the corner. Tis the season to impress your guests with a turkey that will have them craving it year round!

Citrus Herb Roasted Turkey

  •  1 Turkey (fully thawed)
  •  2 lb Butter (room temp)
  •  1 package Fresh Rosemary
  •  2 cups olive oil
  •  Kosher salt
  •  Black pepper
  •  3 heads fresh Garlic
  •  2 Fresh Lemons
  •  2 Fresh Oranges

1 package fresh Thyme

 


 

  1.  Preheat oven to 400 degrees.
  2.  Combine olive oil and rosemary in a small pot and place on medium low heat until rosemary is crispy and oil is fragrant.
  3.  Pat dry the turkey.
  4.  Mix together butter, 2 tbsp oil, pepper and salt. Using your hands, separate the skin from the turkey breasts.
  5.  Taking half the butter, place under the skin and push to cover the breasts, this prevents the turkey breasts from drying out.
  6.  Season the outside of the turkey with salt, pepper.
  7.  Cut the lemons and oranges in half and mix with 2 tbsp of the oil, 1 tbsp of salt and pepper and a few sprigs of the fresh thyme. Stuff inside the cavity of the turkey
  8.  Once the bird is seasoned, place in the oven on a roasting rack and tray and cook for 30 minutes to 1 hour or until skin is golden brown   10. Reduce oven to 325 degrees
  9.  Remove from oven and cover with foil to prevent overcooking.
  10.  Baste with rosemary oil. Repeat every 30 minutes to help infuse flavor.
  11.  Place back in the oven and cook according to turkeys size. 20 to 30 minutes per pound. Cook until temperature reaches 165 in the thickest part of the turkey. remove from the oven, rest for 45 minutes and carve. Place the carved turkey in a roasting pan and cover with the turkey drippings and some of the citrus.
