Black Tea Crème Brulee-image

Broccoli Cheddar Soup

 

Ingredients:

• 2 Qt + 2 cups Chicken Broth
• 1 ½ cup Heavy Cream
• ½ cup Unsalted Butter
• ½ cup All-Purpose Flour
• 24oz Frozed Broccoli Florets ( Thawed and chopped)
• 12oz Shredded Sharp Cheddar Cheese
• 12oz Shredded White Cheddar Cheese
• 1 Large Yellow Onion (Diced Small)
• 6 Cloves Minced Garlic
• Garlic Powder- To Taste
• Kosher Salt- To Taste
• 1-2 tsp Oregano
• ½ cup White wine

Directions:

1. 2. 3. 4. Heat up the chicken broth over a medium high heat.
In a large pot over medium heat, add the butter. Once melted and
hot. Add the onion. Sweat the onions for 3-5 minutes , stirring to
make sure they do not burn. Add garlic and cook for another 30
seconds.
Lower the heat and add the flour. Whisk and cook for around 2
minutes. Once the flour has been cooked out, add the white wine.
Cook for 15 or so seconds before whisking in the broth. Add the
oregano, some salt, pepper, and garlic powder.
Let the soup simmer for about 10 minutes before adding cream.
5. 6. 7. Simmer for 20-30 minutes. Reduce the heat to low and add
cheese one hand full at a time. Whisk until the cheese is melted
and all of the cheese has been incorporated.
Add the chopped broccoli, return the heat to medium and simmer
for another 15 -20 minutes. Make sure to stir so the bottom does
not burn.
Adjust the seasoning and enjoy!
