Lemon Pepper Wet wings-Inspired by Atlanta on FX
I love most media involving Donald Glover AKA Childish Gambino. Top of the list would have to be the FX hit “Atlanta”. In the second episode, two of the lead characters get wings and one of the staff tells him “ he made you those lemon pepper joints, but these...Got the sauce on ‘em”. Since I watched that episode, I had to make a recipe of my own. The following is my take on an Atlanta staple.
Yield: 8-10 wings
1 stick Unsalted Butter
3 tbsp Lemon Juice
1 tbsp Granulated Onion
1 tbsp Garlic-minced
2 ½ tbsp Granulated Sugar
2 ½ tbsp Brown Sugar
1 tsp Citric Acid
1 tbsp Black Pepper
1 tbsp Apple Cider Vinegar
¼ cup Franks Red Hot sauce (optional)
8-10 full chicken wings
½ tsp Citric acid
Fresh lemon wedges
Cracked black pepper
1. Preheat oven to 400°F
2. Place medium size pot over medium heat and add butter, then add garlic and ginger and cook for 10-20 seconds, add sugar and red hot ,mix and simmer for 5 minutes or until butter and sugar combine fully. Add remaining glaze ingredients and slow simmer for 10-20 minutes.
3. Combine wing seasonings-except salt- and coat wings evenly. Season with salt separately. Place wings skin side up and place in oven for 40 minutes. When wings are crispy, glaze with the lemon pepper and place back in oven for 5-7 minutes.
5. Remove from oven and flip over, glaze the other side and return to oven for another 5-7 minutes.
6. Take out of oven and finish with squeeze of lemon, cracked black pepper and enjoy!
*Tip: cut the cook time in oven in half and fry the wings until very crispy and toss in glaze for game day wings!
