
Apricot Glazed Salmon
Ingredients:
- 2- 8oz Filets Atlantic Salmon
- 12oz Apricot Jam
- 2 Tbsp Honey
- 1- 1 1⁄2 Tbsp Dijon or Stone Ground Mustard
- 2 tbsp Apple Cider Vinegar
- Salt – To Taste
- Black Pepper- To Taste
- 3 Tbsp Olive Oil
- 1-2 Sprigs Fresh Thyme (optional)

Apricot Glazed Salmon
Ingredients:
- Pre heat oven on broil setting.
- In a medium sauce pot, add the jam, honey, apple cider vinegar, mustard, pepper, and a touch of salt. Place over medium heat and whisk together. Once the glaze starts to simmer and form small bubbles on top, set it aside.
- Seasonthesalmononallsideswithsaltandpepper.
- In a non stick pan over medium-high heat,pour in 2tbsp oft he oil.Once hot, place the salmon in the pan gently. Sear hard on one side for 2-4 minutes or until nice and golden. Flip the salmon. Add the remaining oil and turn the pan down to a medium heat. Place in the thyme( oil may pop so be careful when doing so) and baste the salmon with the oil. The thyme will flavor the oil as you baste.
- Drain some of the oil and place the pan back on the heat with the fish. Glaze the top of the fish with your apricot glaze and cover for 1-2 minutes before turning off the heat. Allow to sit for another 2 minutes before removing from the pan.
