Roasted Garlic Mashed Potatoes

Ingredients:

3 lb Red Potatoes (Washed & Cut)

2 cups (16oz) Heavy Cream

½lb (8oz) Unsalted Butter

2-3 Tbsp Roasted Garlic (Mashed)

1 Sprig Fresh Rosemary or Thyme

Kosher Salt (To Taste)

Black Pepper (To Taste)

2-3 Tbsp Thin Cut Chives or Green onion

Directions:

  1. In a medium sauce pot, add the heavy cream, butter and rosemary, leave over a medium-low heat until it’s close to a simmer, remove from heat. Remove the rosemary after 10 minutes
  2. In a large pot, add the potatoes and cover with cold water, place over a high heat and bring to a boil. Season the water with 1 Tbsp of Kosher salt.
  3. Using a fork, check the potatoes to see if they are tender, if so, strain the potatoes and add them back to the pot. Using a hand masher, mash up the potatoes until they begin to lose their shape.
  4. Add the heavy cream mix and mashed roasted garlic to the potatoes, mash the potatoes to your preferred smoothness using a hand masher or a hand mixer. Adjust the seasoning with the salt and pepper.
  5. Fold in the chives and Enjoy!
